PB&J Jell-O Shots

ingredients (yields ~15-20)

FOR PEANUT BUTTER LAYER

1 c. water

2 envelopes gelatin coconut oil, melted

3/4 c. Utopian Kitchen Honey Roasted peanut butter

2 tbsp. heavy cream

1 c. vodka*
This could also be made kid friendly by replacing vodka with cold water.  

FOR JELLY LAYER

1/2 c. water

2 envelopes gelatin

1/2 c. jelly (grape or strawberry)

1/2 c. vodka*
This could also be made kid friendly by replacing vodka with cold water.  

Nonstick cooking spray

DIRECTIONS

1. Make Peanut Butter mixture: In a small saucepan, bring water to a boil.  Whisk in gelatin until no clumps remain.  Whisk in peanut butter and heavy cream until dissolved.  Remove from heat and stir in vodka (or water).  Pour into a large measuring cup and set aside.

2. Make Jelly mixture: In a small saucepan, bring water up to a boil and whisk in gelatin until no clumps remain.  Whisk in jelly until fully dissolved, then remove from heat and stir in vodka (or water)

3. Spray a loaf pan with cooking spray.

4. Add 1/2 peanut butter mixture.  Refrigerate for 30-60 minutes until set.

5. Add jelly mixture and return to refrigerator, 30-60 minutes more.

6. Add remaining peanut butter layer and let firm in refrigerator 1-2 hours.  Turn out onto a cutting board, and slice to your desired size.
