ingredients (yields 12)
1/2 cup Utopian Kitchen Roasted Salted peanut butter
1/4 cup honey
1 teaspoon vanilla extract
1 cup rolled oats
2/3 cup shredded coconut
6 tablespoons chocolate chips
1. Preheat oven to 350 degrees. Spread shredded coconut on a sheet pan and bake for 5 minutes. *Watch carefully, coconut burns quickly
2. In a medium bowl, stir together the peanut butter, honey, and vanilla extract.
3. Add remaining ingredients and mix well. Cover and refrigerate for 30-60 minutes to firm up.
4. Shape into 1 inch balls
5. Store in airtight container and store in the refrigerator
